The Easiest Meal. Ever.
I know there’s a lot of recipes claiming to be the easiest ones ever, but I’m going to go out on a limb and say that this one takes the cake:
Crockpot Shredded Salsa Chicken
I’ve been making this regularly when we need a quick protein that I have no time to fuss with. It’s so simple, that every time friends ask me for the recipe, I’m almost embarrassed to say it’s just two ingredients and they’re in the recipe’s name: salsa and chicken.
To make this dish, put 1lb of chicken breasts, boneless thighs or tenders in your crockpot along with a jar of salsa. Big jar, little jar…doesn’t matter! Any jar of salsa will do. Set your crockpot to 4 hours on high or 8 hours on low and when time is up, use two forks to shred your chicken and you’re done!
Our favorite way to enjoy this chicken is in tacos. Melt shredded cheddar (or omit if dairy free) on soft or crunchy corn tortillas and top with a scoop of the shredded chicken. If we’re feeling fancy, I’ll add a can of black beans to the chicken after shredding, or saute peppers and onions to add to the taco.
This also tastes great as a taco bowl. Take mixed greens, top with the shredded chicken, canned black beans, chopped peppers and onions, a scoop of guac or diced avocado and top with shredded cheese.
This meal is my go-to meal to bring to new moms who are not only so happy just to have a meal they don’t need to cook, but are grateful to learn they could prep it themselves in those exhausted, sleep-deprived postpartum days - it’s that easy.
