3 Easy Sheet Pan Recipes

Oftentimes my clients are looking for simple recipes that require minimal prep, ingredients, and time. Sheet Pan recipes are not only delicious but also make cleanup a breeze since you’re cooking everything together on one pan. By changing up the protein and vegetables, the variations of sheet pan meal ideas are endless! Here are three to try: 

Sheet pan Greek chicken and vegetables:

Ingredients:

  • 4 boneless, skinless chicken breasts or thighs

  • 1 pound baby potatoes, halved

  • 2 cups cherry tomatoes, halved

  • 1 rec onion, cut into slices

  • 1 can artichoke hearts, drained and cut in half 

  • ½ cup sliced kalamata olives

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced or 1tbsp jarred minced garlic

  • 2 teaspoons dried oregano

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • ½ cup crumbled feta cheese

  • Fresh parsley, chopped (for garnish)

Instructions:

  • Preheat your oven to 400°F.

  • Place the chicken, halved baby potatoes, tomatoes, artichokes, olives and onion in a large mixing bowl. 

  • Drizzle with olive oil, minced garlic, oregano, thyme and salt. Toss everything to coat chicken and veggies. 

  • Spread chicken and vegetables on a large sheet pan. 

  • Roast in the preheated oven for about 25-30 minutes or until the chicken is cooked through and the vegetables are tender.

  • Garnish with fresh parsley and feta cheese before serving.


Sheet Pan Sausage Fajitas

Ingredients:

  • 1 package chicken sausage cut into slices

  • 2 yellow/red bell peppers, sliced

  • 1 red onion, sliced

  • 3 Tbsp olive oil

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt to taste

  • Shredded cheddar cheese

  • Flour tortillas

Instructions

  • Preheat your oven to 400°F.

  • Place the sausage, onion and peppers in a large mixing bowl. 

  • Drizzle with olive oil, garlic powder, onion powder and salt. Toss to combine. 

  • Spread sausage and vegetables on a large sheet pan. 

  • Roast in the preheated oven for about 25-30 minutes or until the sausage is cooked through and the vegetables are tender.

  • Serve sausage and veggies on warmed tortillas, sprinkled with shredded cheese. 

Sheet Pan Honey Mustard Salmon with Asparagus

Ingredients:

  • 1lb salmon filet or two 8oz portions

  • 1 bunch asparagus, trimmed

  • 3 tablespoons dijon mustard

  • 2 tablespoons honey

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • Quinoa, couscous or rice

Instructions:

  • Preheat your oven to 400°F.

  • Place salmon and trimmed asparagus on a sheet pan.

  • In a small bowl, whisk together whole grain mustard, honey, olive oil, minced garlic, salt, and pepper.

  • Brush the honey mustard mixture over the salmon and asparagus.

  • Roast in the preheated oven for about 12-15 minutes or until the salmon is cooked through and flakes easily.

  • Serve over quinoa or any grain of choice.
